NONE of which are salads. Now, I love salads. I am a big fan of salads. But I appreciate that if you’re a busy person, you want to come home after a long day of work and have a hearty, warm, substantial meal. Plus a dessert, because you always need pudding!
So while there are no lunch recipes in this book, the dinner recipes usually serve 4. So if you are cooking for 1 or 2, the leftovers make a great packed lunch. Only the tofu shakshuka serves 2, but by that point in the week you may have accumulated quite a few dishes worth of leftovers, so I’ve tried to cut the food waste down as much as possible!

A shopping list
A perfect little print out of everything you will need to buy this week, organized by where you will find them in the supermarket. There is also a little column for ingredients you will need buy may already have in your pantry! You can just do a double check before popping out to the store, to avoid buying something you already have!
The recipes are also designed to cut down on leftover ingredients. So you won’t be left with half a block of tofu by the end of the week. Of course, some things like rice and pasta come in large packets. But have leftover rice is less of a problem as it doesn’t go off quite as quickly!
A schedule
I know you are less likely to want to have to cook a fancier recipe on hump day, and that perhaps Saturday is a better day for having fun win the kitchen! The recipe schedule is designed with that in mind. But if you SIMPLY CANNOT WAIT to try out the quiche, go for it! There are no rules.
It’s wallet friendly
Of course, this would depend on how much you have already in your kitchen. But none of the ingredients, except the nutritional yeast and a teensy packet of cashews, are particularly expensive. Speaking of which, if you can’t find nutritional yeast it is perfectly fine to leave it out. But if you’re new to veganism do try it out if you can! It’s got a hella good flavor. This brand is the best one, and it has added B12. If you’re wondering if you are going to NEED 3 tubs, you are. Amazon knows vegans well.
If you follow a gluten-free diet…
All recipes, except the brownies, can be made gluten-free! Just use special GF bread, pasta, rice flour and tamari as substitutes.
